Developed for The National Turkey Federation by The Culinary Institute of America this Latin American Style Migas with Scrambled Eggs, Salsa, and Queso Fresco features Turkey Chorizo,

Ingredients

Turkey Chorizo 8oz
Olive oil 1 oz
Sautéed yellow onions 4 oz
Sautéed green & red peppers 4 oz
Butter, raw 2 oz
Eggs, beaten 8 ea.
Salt & pepper to taste
Shredded Jack & Cheddar Cheeses 4 oz
Crisp Corn Tortillas 3 oz
Queso Fresco 4 oz.
Fire Roasted Salsa 8 oz
Chopped Cilantro to garnish

Directions

Sautee the turkey chorizo, breaking it apart into a crumble.

Heat oil in a pan, and sautee the onions and peppers until soft.

Add the butter and sautee until melted and lightly browned.

Add the eggs and continuously stir to scramble. Fold in the tortilla chips, jack and cheddar cheeses, and cooked chorizo.

Serve in a bowl topped with salsa, queso fresco and cilantro.
