Ingredients

TURKEY TACO MEAT, thawed: 10-1/4 Pounds
Small bagels, split: 50
taco or picante sauce: 12-1/2 Cups
shredded lettuce: 12-1/2 Cups
diced tomatoes: 12-1/2 Cups
shredded Mexican cheese blend: 6-1/4 Cups

Directions

To steam turkey taco meat: Place a small amount of water in bottom of a large pan. Place each thawed 5 pound bag of product in pan, place pan in steamer and heat for 20-25 minutes or until the internal temperature reaches 165 degrees F. OR to simmer turkey taco meat: Bring a large pot of water to a full boil on high heat. Place the thawed bag of product in boiling water and heat for 20-25 minutes or until the internal temperature reaches 165 degrees F.

Arrange bagel halves on hotel pans. Lightly toast bagels.

Assemble bagels: For each bagel half, spread 2 tablespoons taco or picante sauce atop bagel halves. Add 1.64 ounces hot taco meat. Cover each with 2 tablespoons lettuce, 2 tablespoons tomatoes and 1 tablespoon shredded cheese.
