Turkey and Confetti Bruschetta

Ingredients

salt and black pepper: 1/4 Teaspoon each
onions, finely diced: 2 Small
yellow bell peppers, cut into 1-inch pieces: 2 Small to Medium
olive oil: 2 Tablespoons
garlic, minced: 2 Cloves
salt and black pepper: To taste
tomatoes, seeded and coarsely chopped: 2
Italian bread, sliced lengthwise in half: 1 loaf (about 16 inches long)
olive oil: 2 Tablespoons
packed fresh basil leaves, cut into very thin strips: 1/4 Cup

Directions

Grill Turkey Cutlets

Preheat grill or broiler. Season turkey with salt and ground pepper.

Grill or broil turkey, turning occasionally, 4 to 5 minutes or until cooked to an internal temperature of 165 degrees F. Remove and keep warm.

Grill Vegetables

In medium bowl, combine onions, bell peppers, oil, garlic, salt and pepper. Toss until evenly coated.

Grill vegetable mixture in grill wok or on grill screen, stirring occasionally, until tender. Add tomatoes; grill just until heated through.

Assembly and Serving

Brush bread with oil. Grill bread, cut-side-down, just until toasted.

To serve, cut toasted bread into 8 pieces. Cut turkey cutlets and evenly divide onto each piece of toasted bread.

Spoon grilled vegetables over and alongside turkey and sprinkle with basil.
