2010 Iowa State Fair Winner – “Upgrade Your Meal with Turkey” Contest

Ingredients

barbecue sauce: 3/4 Cup
light mayonnaise: 1/4 Cup
light sour cream: 1/4 Cup
whole grain pasta – cooked, drained and cooled: 12 Ounces
OVEN ROASTED TURKEY BREAST, chopped: 1-1/2 Pounds
grilled corn kernels, cut off the cob: 1 Cup
zucchini, sliced, grilled and chopped: 1 Medium
Roasted/grilled red peppers, ribs and seeds removed and chopped: 4
chopped fresh spinach: 1 Cup
green pepper, seeded and chopped fine: 1/2 Medium to large
Feta cheese, crumbled: 3 Ounces
green onions: 2
crisp lettuce leaves: 6 to 12
chopped parsley: As needed

Tangy Dressing: Whip dressing ingredients together. Cover and chill while preparing salad.

Turkey Salad: In a large bowl, mix first nine salad ingredients together. Add dressing and stir to coat all ingredients. Cover and chill, at least, two hours.

Portion salad onto lettuce leaves and garnish with parsley.
